Rajasthan's food map is wider than the tourist thali. Jodhpur does pyaaz kachori and lassi at narrow counters; Pushkar has malpua at sunset; Bikaner exports bhujia but eats so much more locally.

Our heritage departures include one "no agenda" meal - a family kitchen or farm lunch where recipes are not adapted for foreign palates. Vegetarian travelers find paradise; meat options exist but are not the focus.
